Chocolate Fix: It Works for Me

My Aunt KT sent me a yummy recipe this morning that immediately had me running for the kitchen to try it out. Need a chocolate fix? This one works for me! And it’s healthy too….kinda… Mostly it’s yummy, though.

Mock Babe Ruth Bars

4 cups quick oats
1/4 cup corn syrup
1/4 cup chunky peanut butter
1 cup brown sugar
2/3 cup melted butter
1 tsp. vanilla

Mix above ingredients thoroughly, spread in 13″x9″ pan. Bake at 400 degrees for 12 minutes.

Topping:

1 6 oz. pkg. chocolate chips
1 6 oz. pkg. butterscotch chips (I used dark chocolate chips)
2/3 cups chunky peanut butter

Melt chips, add peanut butter, spread over top of cookies, refrigerate until firm, cut.

Enjoy!

    I’m sorry to be such a sour puss… but is there anyway to replace the corn syrup? Corn syrup is just toxic!

    i think the only thing saving my hips right now is that our daughter has a severe nut allergy!

    Thank you! I read that this morning before my Moms program and had 30 minutes before I had to leave. Priorites, priorities! Chocolate is above a shower. No question. Very yummy! Thanks for sharing!

    I have a very similar recipe I’ve been using for years, only with Special K intead of the oats, and use Aero bars mixed with chocolate chips for the topping (no peanut butter). The trick is to keep it refrigerated so that the chocolate topping is really nice and hard. Yummy.

    Re: Martina’s concern about corn syrup. You could try maple syrup. It won’t have exactly the same consistency and will add a little mapley taste, but I guarantee any kid (and I think all the women who commented here) would still eat it!
